Beer Can Chicken

This post is for all the dads out there that will be on their patios this Sunday evening grilling and drinking an ice-cold beer. It’s about combining those two loves into one foodstuff. Have you figured it out? Yes, it’s the magically awesome beer can chicken. It’s ridiculous to look at while it's cooking but it makes one super moist and bursting with flavor chicken.

Happy Father’s Day! Just don’t wear the tie your kids gave you while grilling (it's a serious fire hazard).

buttermilk-marinated, flax seed-coated baked chicken 

My mom can cook Japanese food like nobody's business, but when I was growing up she didn't make very many "traditional" American foods. She bought the convenience food versions: Swanson's TV dinners, Kraft Macaroni & Cheese, Chef Boyardee, spaghetti with Ragù-brand tomato sauce and Shake 'n Bake.

I always have fried chicken on the brain but this week, I craved Shake 'n Bake: Well-seasoned, crispy breaded chicken. I have fond memories of helping my mom make dinner by shaking chicken pieces in a plastic bag. I thought I could/should make my own version - perhaps an even healthier "better than frying" version. Traditions be damned.

Every once in a while, I get a hankering for some wings. Teriyaki wings. Sticky, lacquered, finger-linkin' yum. They take some doing but I think the results are pretty darn tasty.

thai-inspired coconut chicken soup

I collect ingredients like some women collect handbags and shoes. I've got authentic abuela-made mole paste on the top shelf of my fridge chilling alongside a jar of preserved lemons I picked up in Marrakech; Japanese and Chinese soy sauces sit next to eight different bottles of vinegar in my cupboard. Don't ask how many different salts I own (ten+). So of course I've got a bag of dried shrimp, spicy bean paste and nam pla just waiting to be used.
